Gotta' love Cookshack! Cool

After great success with a PB on the weekend, SWMBO and I smoked our first brisket today. We got a 7.8lb flat from BJ's -- put it on at 6:30am and by 4:30 it was ready. It was one of the tastiest briskets I ever ate. Yum!

I used my own "nuthin' fancy" beef rub which I find cheaper than buying pre-made ones. Here's the rub:

2 Tbs kosher salt
1 Tbs light brown sugar
1 Tbs garlic powder
1 Tbs "seasoned pepper" (McCormick's)
1 Tbs paprika
1/2 Tbs onion powder

This makes just enough for one brisket, and my wife says, "I don't know how you can improve on this -- but keep trying!"

Note: For Pork Butt I add 2 more Tbs of brown sugar. For ribs I use the same pork recipe only tsp's instead of Tbs's.

Thanks, last year I was using an el-cheapo electric bullet smoker -- it was definitely painful. It ran too hot (no thermostat), so I would have to unplug it, let it cool, plug it in, let it get too hot, then repeat all day.

Yesterday, we put it on, checked the temps once or twice, then pulled it out when it was done.
