So my Smoker showed up on Friday and I broke it in per the instructions Saturday. So bright and early this morning I went for a complicated maiden voyage with my SM025 - brisket.

Sadly I made a newbie mistake a couple weeks ago and bought a flat instead of point brisket, but that was fine and ended up with a very solid first try at brisket.

Loving this new toy and can't wait to experiment and perfect some more.

Thanks everyone for some great tips on this board, especially lining everything with foil. Brilliant.

Thanks. Honestly without spending awhile on this board reading some great wisdom from the masses I don't think I would've had such success on a first try.

I know I would've also had quite a mess if it wasn't for the foil tip and the constant reminder to not forget the drip pan. Smiler
With the cookshack electric smokers, I think the only 'mistake' that can be made occasionally is over smoking. I've made ribs that tasted like an ashtray by using too much wood, and likely too high a moisture content in the wood. I prefer ribs don on my pellet smoker (FEC120), then finished on charbroiler, but for butts and briskets, the electric smoker is an absolute beast at turning out beautiful meats.
