Just finished a batch of deer jerky.It was ground deer meat with ground beef mixed in.Had to rerun it through the meat grinder using a finer grind.Added my seasonings and cure(American Harvest brand)mixed well,added to jerky shooter and made strips.Placed on grilling trays and used the SmokinTex with 2oz.hickory set at 180 for 3 hours and that was some FINE tasting jerky!!
