just did my first and second batch of jerky in my FEC 500. i used top round, wet marinated for 48 hours, i used high mt. jerky seasoning. first batch i used peppered and the 2nd. i used jalapeno'. i laid them on the racks and smoked them for 4 hours @184. i turned them over at 2 hours. a total of 10 lbs. with a finished weight of just over 4 lbs. i cut the top round 3/8" and it came out done, tender, and chewy....just like i like it! chech it out!

looks good. I've considered a FEC 500 with a trailer. How many racks did it take you to load 10 pounds of raw? Yours was a little thicker that what i've experienced, looks great. So if you loaded your FEC 500 up, how many raw pounds could you do of 3/8" meat? Also, how low/hi temp with the smoker go. I have a FEC 500 so no experience with the 500. Do the racks rotate while cooking or only manually?
