I just finished my first smoke in my new Smokette 09. 4.5 lb of beef ribs. This was only three ribs (lots of meat!) I tried to go by the book - 225 for 4 hours 45 minutes, turned down to 140 (didn't open the door) and went an extra hour. I used one 2 oz hickory chunk. Ribs were very juicy and I would say that the smoke/rub amount was just right as the flavor was good. The ribs were very fatty and a bit chewy. Would more time holding at 140 help?

I am not much of a beef rib fan but 4.5# on three ribs sounds like monsters! Do a search on beef ribs and you will probably get a lot of hits and good info. Use the "find" function just above your post.

One thing I will suggest is to toss the cookbook that came with your smoker (when it comes to times and temps) and come to the forum and search or ask questions. there are some veteran Q'ers here who know their stuff and love to assist.

Experiment, have fun and visit the forum often!

Thank you for the warm welcome. I have already picked up some great tips on the archives.

I'm starting a 5.5 lb flat brisket tonight and I must admit that I am very nervous. My remote thermometer with alarm is DOA so I will be flying blind until the morning. I plan to start off at 225, wrap it when I wake up, and turn it down to 140 when it hits 190. Hopefully that will do the trick.
