Just used my new CS025 for the first time. I did a 10lb brisket, market trimmed. I used Mainely Dave's brisket rub except I substituted Lawry's Seasoned Salt for his regular salt. I put Worcestershire Sauce all over the brisket and the sprinkled it with the rub. Let it set overnight in the frig. Cooked it to 195 degrees with pecan and mesquite (about 14 hours). It turned out great!!! The ends were a little dry but the rest was moist with great flavor. I'm hooked - will try ribs next.
