Hi,

Got a 6 lbs - 3 rack pak - from BJ's Wholesale (east coast version of Sam's Club) for $22. Used 1 1/2 racks - rest were foodsaver'd. Didn't have time to prepare other than rubbing with Cookshack's Rib Rub shortly before smoking (- left membrane on). Used 2 chunks of hickory. Set at 225. Used a Taylor probe hanging from vent to measure temp at about top rack level. Temp flucuated from 190 to 220. Opened after 2 1/2 hours - needed more time - left for another 1/2 hour til people were hungry (yeah I did cardinal sin of having people waiting...)

I had warned my guests not to expect much but everyone (including me) were pleasantly surprised on how well they came out. They probably could have used another 1/2 hour to get a little more tender but they were a hit anyway.

My next attempt at baby backs will probably be for a house party - how much more time will I need if I load up the entire smokette with a full 5 racks - the 10 lbs max that cookshack recommends for ribs? (or is a full load not a good idea?)

Congrats on the first ribs.

The volume of ribs won't affect the time on finishing your ribs.

It will be a function of the weight of the individual racks.

As a matter of fact,it seems to cook better with a full load and has smaller temperature swings.

You might have to get a little creative in your placement to hold five slabs,though.
