We have done several batches of jerky in our 008. Excellent every time. However, on two occasions we have had flames come from the smoker box during the first two hours of the process (heavy smoke w/door open ~1 in.)

We keep the smokette spic and span so there is zero residual grease at the strat. We use hickory wood from Cookshack. It seems to happen when we have a full load (8 rods full) rather than a smaller load.

A quick spritz with the spray bottle and the flames go out but the smoke stops as well. Anyone ever witness this? What could be the cause? FYI, everything else done on the 008 comes out perfect.

"Too much air..." Thought so. This presents a challenge beacuse we use the QDogg method and it requires the door to be open "1 inch" for the first two hours of the process. That's when we have the flames. I have read that this open, close, open, close technique is not necessary but I haven't seen a good alternative. Perhaps placing the wood more to the back of the wood box away from the open door will help. Dunno.
