Use like Tabasco:
Flanagan's Table Sauce
1 head of garlic, peeled and chopped
1/2 sm. onion, chopped
1 fresh jalepeno, chopped
6 anchovy fillets in oil, drained and chopped
2 1/2 c. red wine vinegar
1 tbs. cayenne pepper
Put all the ingredients in a quart jar and cover. Leave in a cool place for 2 weeks, shaking the jar often.
Strain thru a non-metallic strainer, pour into bottles or jars. Seal and process in a B/W bath for 10 minutes. Store cool and dry for a month before using. Use in anything you want to perk up the flavor. Makes 2 1/2 c.
I make a batch of this once a month...like today.
