a couple weeks ago I was puttin along and noticed a bunch of fire trucks in front of the local Smokin rib shack. As it was late at night and they were dressed in turnout gear complete with fire hoses I figured maybe they had other reasons to be there than the late night ribs. They have been closed since......
Yesterday I spoke with one of the fire inspectors who said the the health dept made them stop smoking under the old oak tree, they had to be inside a screened area. Apparently they started smoking in the back where they store the wood. This is a screened patio with aluminum pan roof. According to Mr Inspector the "grease" had built up on the underside of the pan roof and then ignited while the place was closed all by itself.
Don't know how long they will be closed but here is something to think about for us that smoke under a roof without proper exhaust.

They've had problems with not cooking under cover. They used to use that big dawg trailer cooker at the Ft. Harrison location - but I haven't seen it there in ages. I was guessing they were cooking at one of the other locations and transporting the meat to Ft. Harrison. (coulnd't smell smoke!)

I've driven by but haven't stopped or really paid attention to the Clearwater location for a coule of weeks.

These guys do ok que but they use a bit too much white smoke to suit me and I've tasted lighter fluid more than once. They have continuously flirted with the health department about those cookers being out in the side yard instead of under cover.
