You won't get much rub/smoke through the skin.
Cut a T shaped slit through the skin and cook 3-4 hrs.
Skin is hard to remove,when cold/uncooked.
Take out and the skin should peel/slip away fairly easily.
Then add another chunk of wood and apply your rub.

MADE SEVERAL CUTS ON SKIN. AFTER 5HR TOOK IT OUT AND SKIN CAME OFF REAL EASY. ADDED 1OZ WOOD AND MORE RUB. COOKED TO 190DEG REMOVED LET SIT FOR 1HR AND CHOPED. WAS FANTASTIC. THANKS TOM

It's too much hassle to try to take it off before the cook.
Wait a few hours, pull, and then apply the rub.
Much easier.
Take the skins and fry them. Nice snacks.
