My thoughts exactly....about two years ago. I thought about the roach coaches and that they don't drain the fryer between stops......

No, you can't travel with hot (or cold) oil. I saw a guy's trailer that had these custom-built stainless tanks, I thought they looked nice until I found out what it cost to have 'em made.

My solution (OK, my wife's):
She bought two big pressure cookers at the junk store. They probably wouldn't hold pressure...but they do hold hot grease. I filter the grease right into the two pots, which of course have tight-fitting lids.....and away we go.

Makes cleaning fryers fun.....well, not really. But it works great and was cheap too.
Hi.

Just a question to add. I have seen table top models of the fryers that have the hood type thing attached eliminating the fire hazard and need for the big system. Kind of a self contained unit. I didn't really look closely at them, but does anyone know if they are built for travel?

i almost bought one of those, many years ago, when they first came out. it looked very neat, but in a pinch, you cant hurry it up, like the regular models. it will only cook one order at a time. i am sure they will travel, but not very efficient for business.
best to get counter top or stand alone models. just drain oil into big pot(with lid) before travel.
