In a thread further down someone mentioned a BBQ team, Checkered Pig, serving 4800 racks at an event in Nevada. I went looking for some info on their equipment out of curiosity, and found this link that will make you drool. Never did find out what they cook on, but they sure do know how to use whatever it is.

In an article I found about them at the same event in 2007, it said they averaged 600 racks a day at $22 per rack. Not bad.

Tommy is from over in your neck o' the woods.

Some of the comp events ,require a vendor to do both,to get their space.

A real bitch,as you would know-but more money for the organizer.

Tommy is one of the few that can at least be representative,doing the comp,while trying to manage a complete road crew,earn a living,and pay his help.

Texas Rib Rangers,and Music City Pig Pals are a couple more that stand out in my mind.

Tuffy Stone,out of Richmond competes as Cool Smoke and runs 12-15 caters on the cell phones.

You guys,like Todd,have all my admiration!!
