Performed our first "party" smoke last weekend in my SM025. I put a 12 lb. Boston but in at 9 PM the night before, and when it came out at 10 AM the next day, I loaded in 4 briskets totaling about 20 lbs. The briskets were done by 3 pm (I assume because they were small and thin), so we wrapped 'em in foil and held them in the smoker until 4 or so. We pulled the pork and sliced the brisket at about 5 PM and were serving 50 guests by 5:30. Nothing but kudos from all the guests....so I guess I lucked out and succeeded. Just goes to show.."even a blind hog finds an acorn once in a while".
