I can't believe the amount of advice I got in just 12 hours. Don't you guys sleep/work? Anyway it sounds like I need to relax and start sooner. I appreciate the input and I'll use the probe thermometer from now on. Thanks again guys and I'll let you know how things work out. By the way Big Daddy, you are the one who turned me on to good BBQ. I noticed your Cookshack in your Q Wagon on College Road. I will check in soon.
