Yesterday I made a marinade using Youzu, which is a citrus soy sauce. I used:

1 cup Youzu
1/2 cup water
2 Tbs kosher salt
2 scallions chopped
10 fresh ginger coins (ginger root peeled/sliced)
3 cloves minced garlic

I marinated for 8 hours, turning once and then dried on a rack in the fridge for 1 hour till tacky.

I smoked for 1 hour at 200 degrees with a small piece of Alder.

It was amazing.

Next time I will try using sake in the marinade.
