I hope that I do not sound too dumb, but I noticed in the Cookshack Cookbook, that when making ground meat jerky, that you roll out the meat onto a piece of wax paper the size of your racks in the smoker. Once cooked, you take out the meat and turn it over onto another piece of wax paper. My question is, "Do you cook the meat on top of the wax paper in the smoker?" I would think that the wax paper would deteriorate.
