I am looking for a new "open" recipe to start turning in....I have done Pork Chops simmered in pinapple juice and crushed pineapple on top, with fair success (2)-7ths and an 8th. Tried Grilled shrimp nothing special there, they get cold and rubbery quick,
Stuffed peppers are the most common....thinking of a stuffed Loin....any new idea's on something new to try.

Stuffed Smoked Pork Tenderloin
from the Cookshack Cookbook Still Smokin' page 29

½ pound shrimp, shelled and de-veined

¼ cup (1/2 stick) butter

1 box seasoned stuffing mix for pork chops

2 pork tenderloins, 2 pounds each

2 tablespoons Cookshack Spicy Chicken Rub



Coarsely chop the shrimp. In a medium skillet, melt the butter.Add the shrimp and sauté until just cooked through.

Following the directions on the box, prepare the stuffing mix. Combine the shrimp with the stuffing and allow to cool.

Remove any membrane and fat from the tenderloins, and cut each one into pieces about 4 inches long. Carefully insert a boning knife through the center of each tenderloin piece, beginning at a short end, and rotate the knife to form a hole through to the other short end.

Stuff each tenderloin piece with the stuffing mixture. Lightly dust the chicken rub onto the meat.

Smoke-cook at 225ºF with 2 ounces of apple wood for 1½ hours. For a one-smoker (similar to a one-pot) meal throw corn-on-the-cob in the smoker on the top grill when you put in the pork.
Might be at Meat in the Middle a buddy wants to do it but not alone, and i offered to help him so if it happens I will let you know.

I dont know if i will do anything up there in Dallas...If I do anything it will be West in July some heavy hitters there...I think I will even pass on Meridian already to hot for that dust bowl.

that's why I didn't do it last year, but this year I have my new trailer.

DO meat in the middle, would be fun to hang out. The two contests give you twice the chance for getting some money (which I did well there last year).
