I had a lot of people over for Thanksgiving today and bought a frozen 22 pound bird from Kroger. Actually, I got it at no cost due to a coupon they sent me. Of course I spent around $100 bucks while getting my "free" turkey.

Anyway, the bird had an 8% solution added to it and I brined it for right at 24 hours. Due to the size of the bird, I cooked it on my Ducane grill at 325 degree F. I cooked it until the breast temperature was 165.

I used apple wood and a piece of sugar cane split in half as the smoke source.

It came out great, not salty at all and the breast was perfect. The dark meat was tender too and clear juices.

I'm boiling parts of the carcass right now to use in a gumbo later.
