Not every area is blessed with a good source for brisket.

I have to go to a Walmart to get my packers. Or to a wholesale supplier. And then I buy a case and have to settle for what ever is inside. At Sam's they have only had flats, at close to double the price.

Every other grocery in the area has flats at a high price.

I'll jump on it. You have to remember, that there are plenty of places in America where you can't even find a brisket, or if you do, it's only a 2lb flat. If over 10 years of the forum has taught me anything is that not everyone has access to the same meat.

WHERE you buy it from means very little (it means a little, but not if you know about grades, quality, what to look for; there's more than one butcher shop where I know more about cutting meat than they do). It's said to say but MANY butcher shops buy their stuff from the same place Walmart does, then then they just unwrap it from the cryovac, put it in the display case and call it brisket.

Key is to know who you're buying from and learn to talk to them and trust them.

I don't buy from Wally world, but do buy from Sam's club and the whole butcher team knows me on sight.

Oh, and you might not want to be calling people hillbilly's, some of us have relatives in those hills that might come looking for you.

I guess coming from the hills of Ky,and all the branches of the family running beef cattle operations,I'll touch on this.

Over the last ten years of cookin' a few packers,visiting,or calling probably a hundred "butcher shops",I've yet to find one that knows a prime/upper choice 15 lb packer from a bag of chicken wings. Roll Eyes

Yet,I can give you a few names of folks that have won state championships using "wallyworld" packers.

FYI, I get my briskets from Sam's in Fayetteville. Have at least two local butcher shops, but I've found the meat at Sam's to be of equal quality, at times better, and the cost is significantly less. Folks at Sam's are easy to work with and the selection is typically very good. Picked up a brisket last week, looked thru probably 30 and picked out an excellent one that made some great food for the Bowl game last Saturday.

I guess you hit right on the head. I guy should worry more about the grading than where he is buying it.

You know that a hillybilly is a person that has, can, and when necesary,can probide for his family without using an electric can opener.

And by the way I'm glad he didn"t give his location. I wouldn't want to think there was a whole town of IDOITS...
