This is my first post here, so forgive me if I'm in the wrong area.

I'm smoking 3 racks of st. louis style pork ribs for a company function in a couple days.

My question is, If I foil these immediately after pulling from the smoker, then wrap that in towels warmed in the dryer, then.. place all that in a well insulated cooler, will they stay at a safe temperature for about 2 to 2.5 hours?

You should be fine.

As long as the ribs and most other cooked foods are consumed within 4 hours of cooking, from a safety stand point it doesn't matter what temperature you hold them at. Your ribs should be warm and safe if eaten within 4 hours after the temp of the ribs falls below 135F.
The best method I found was make sure you have a high quality cooler. One of those advertised to hold ice in 90 degree weather for 5 days.

Fill 1/2 way with hot tap water, close lid and leave it until you are ready to use it. Then pour out the water, wrap your meat in two layers of H/D foil and then a towel, then place in cooler (or would it be called a warmer?), close lid. This works for several hours.
