Any one interested in the south central Texas area I was recently in Huntsville Tx. and finally found a meat market with IBP brand choice grade cryovac beef briskets.

I have had some of the same trouble with good and tender but slightly dry beef briskets and have not found a good choice grade brisket to buy. So this weekend there will be no excuse as I will smoke one of these bad boys up and see how it turns out.

For anyone interested probably from the Houston area north and Corsicana south or if you run I 45 through Huntsville it is just off the freeway in the middle of town. 1.99 a pound and they had 12 to 18 pounders.

Have you tried your local Sam's as I know they have those in the Dallas area? Here in Okc there flats are around 2.5pnd and their full packers are around 1.68pnd. Most of the time their flats are choice and the packers are select. However, every now and then you will find some choice full packers mixed with the flats.

That's were I shop 90% of the time. But also 90% of the time they only have flats.

But last week I bought 60lbs for a meal. they were all marked flats, but half were small packers, with the point on.

They cooked great. I have always liked a flat better for meals. And these were in the 8-9lb range flats. They did well, and everyone loved them.

Put one in the freezer for later.

But the price was around the $2.85 per pound (over $3 counting tax).

Crony, you just need to cross the mountain and buy a truck load. Hey are you going to enter the comp in Gray, Tenn. in the spring???
