Right now I'm stuffed to the point of discomfort. I just couldn't stop eating brisket--my first brisket. I couldn't be more pleased with my new 009 Smokette. Here's the time line:

Thursday: bought a 10.7 lb packer cut brisket at Walmart, a container of Rib Stars Brisket Rub and some Head Country barbeque sauce.

Friday: At 7:30 PM I trimmed the excess fat off the brisket and left about a quarter inch of fat. I then rinsed it good and dried it. Then I rubbed it down with a generous portion of the Rib Stars Brisket Rub. I covered it and let it sit at room temperature until 9:00 PM. Then it went on the middle rack of the 009 at 230 with 5 oz. of Hickory. Had to fold the tip under to get it to fit.

Saturday: At 4:00 PM (after 19 hours) the temperature hit 191 and I pulled it, double wrapped it in foil, then a towel and put it in a cooler. Then I put a pan of beans in the 009 and 2 oz of hickory. We ate at 6:00 PM. The beans were nice and hot and had a nice smokey taste. The brisket was still nice and hot and very tender. It sliced up great and had a terrific taste. It also had a nice tangy bark. I really like the Head Country sauce too, it might be too sweet for some, but I like it.

I'm too new at this to be an expert, but this smoker (and this forum) can make a rookie look like a pro!
