Just to play with my new chamber vacuum sealer I tried injecting and brining a couple small butts that were on sale. I will smoke them up this weekend and see if it makes a difference at all.

Nice setup. I have lusted after one of the vacuums for some time. Pockets not deep enough right now. What brine did you use?

Questions. What was the salinity of the solution and how long are you brining it. Do it too long (more than a day) and you'll be making ham.
I didn't measure it since it was a manufactured brine but I used it at 50% and they were in for 24 hours.

Turned out great, even the smaller one was nice and moist and you could taste the flavors from the brine.
I'm sure I wont do it every time but when I have the extra time I will.
