My wife forgot to put a foiled and wrapped butt in the refrigerator after cooling last night. It sat out for 9-10 hours, is it safe to eat or should I dispose of it?
What was the temperature when you discovered it? If it was below 140, toss it. If you didn't take the temperature, toss it. Err on the side of good health.
Like Tom said, if it dwells below 140 for any length of time, it needs to go in the dumpster. I know that's not the answer you're looking for, but what the heck... it's your toilet paper supply.
Once the meat was cooled below 140� most likely, it needed to held under 40� from that point. 9 hours at room temp is a long time. The bacteria that is formed once reheated over 140� dies but the dead bacteria is toxic. Eat at your own risk. Jim
