Garnet, welcome to the forum. Lots of posts on the forum about jerky. It seems to be personal preference whether to cut against or with the grain depending on how chewy you want the jerky. Any commercial jerky I have had was cut with the grain but I have tried both ways when I made it in my Smokette. I prefer to cut with the grain. When I cut against the grain, I had some pull apart when I hung it on the jerky rods - just sort of stretched out from the weight - but I wasn't using flank so I don't know if that would do the same thing. End product was delicious either way.
