I've been fortunate to turn out some good venison jerky lately. I use Eastman outdoor cures purchased at Wal-mart and Atwoods. It's very easy to use. Smoke with a few chuncks of Hickory for 3 hours. I open the door and reassemble racks every hour. I haven't had a lot of success using more than two racks. Meat is too moist and doesn't cook evenly.
