This will be my third beef jerky attempt.
The first two times my jerky came out orange and the texture was soft like cooked meat.

Ingredients used
White sugar
Brown sugar
Non Iodized salt
Paprika
Garlic powder
Black pepper table grind
White pepper
Ginger
Cayenne pepper
Crushed red pepper

This recipe worked great in my drum smoker with side firebox.
I had been making jerky for many years that way.

This time I will use High mountain Jerky kit and Q Dogs technique.

I will post photos as I do this.

I make lots of jerky in my Smokette and it is just right every time. I can't let on to anyone when I have some or it will be gone real fast. I just make the regular himountain method. Sometimes I add some ground red pepper or garlic or onion powder or jalapeno salt. Venison makes the best, lots better than beef.

I saw some himountain kits at wallyworld the other day in the spice section.

I ditto GLH. I make plenty of jerky in my 008. Ya just have to adapt your recipe to the smoker.

If you have a favorite recipe that you used from your other smoker, dehyrator, or oven, go ahead and use it. Just know that the cook time and temps will need to be modified to your 008.
