Appreciate anyone with the expertise to help us out and we do get into discussions about Sausage & Jerky.

I'm the moderator over here and when we get a question about sausage/jerky I'll make sure we yell for your support in the responses!

Tell us a little about you, your smoker(s) and your expertise. We like to know who are members are (there is a recent post in the Open Forum for Roll Call)

Thanks for the warm welcome.

As for smoking, I'm no where near the same league you guys are. I just make a smudge pot and let the meat go 'til it turns brown. ;-)

A little bio'... I'm retired and spent all my life earning a living in the food business. From dishwasher in a greasy spoon at 15 'til now.. Oh, and 10 years in the USN. :-)
