I just finished my first batch using a Nesco Jerky Gun I received for Xmas. It tastes as good as it looks even using the generic Nesco Jerky Seasoning that came with the gun.

It took me 3 or 4 years to develop a consistently, tasty, home-grown london broil jerky marinade - so now, trying to find a ground meat counterpart, presents a new challenge. Someone please tell me if I'm wrong, but when using ground meat, you can't marinade. So your recipe (ingredients) are mostly limited to dry ingredients? Meat rubs, cayenne, cumino, etc.

If anyone has any ground meat jerky recipes that they'd be willing to offer as a springboard.....I offer a big hug in advance. AND I'll even send you my ENTIRE Don Henley CD collection.....please?

Do you guys grind your own meat?

The market I use will grind for me for .10 a pound, I usually get 15-30 pound at a time, I figured i can't get my grinder out for 3 bucks, let alone clean it afterwards.

Am I wrong in my thinking?

I usually call and order what i want and tell them when i am picking it up, and that is the day it is ground.
Acually the Nesco jerky seasoning is pretty hard to beat for ground meat jerky. It's sort of expensive, though. For whole meat jerky, I use my own mix consisting of Tenderquick, black pepper, onion powder, garlic powder, and dry mustard. You could probably use those same ingredients for ground meat jerky too, it would just take a while to get your proportions right.
I have used the Nesco jerky seasonings and jerky shooter for the last 8 years and always have great tasting jerky.Sometimes I add a palm full of cayenne,palm full of Lawrys garlic salt,some liquid smoke and a few squirts of soy sauce to the regularNesco jerky seasoning.Turns out good!Enjoy
