10am today put in 27 racks of baby backs. Gonna try and repeat the ribs when my motor went haywire. Smokin at 180...when the meat shrinks back on the bones I sauce and reduce heat to 140 to let the sauce absorb the smoke flavor. Have 4 pounds of pulled pork to warm up and 7 pounds of peach beans. 10 pounds of spuds (reciepe I found in fourms). Figure on eating around 6ish. Later we kick back and watch my son and his friends light up the sky with our annual fireworks display. We usually have around 100 people show up!
