Just did a pork tenderloin in the Smokette. Turned out very well.

-- Costco prepacked unseasoned pork tenderloin. Package of two bundles of two tenderloins in each. Total weight about 5.1 lbs so about 1.25 lbs per tenderloin. Cost about $17.50

-- Trimmed the hell out of it to get rid of the fat

-- Lightly rubbed with Cookshack's Spicy Rib Rub mix. More like a dusting. Wrapped in plastic into the fridge for maybe an hour while I had other stuff to do

-- Did not brine

-- 1 block of apple wood

-- Smoked at 250 (full on) til 140 degrees with probe and Thermapen.

-- Took about 55 mins from a cold smoker to 140 degrees.

-- Temps come up FAST so don't walk away from the smoker for long

-- Double wrapped in foil while making sides

-- Served with red raspberry seedless jam heated with about two TB Tabasco Chipotle sauce added to taste

Turned out REALLY good. Very tender. Juicy. Not dry at all. That said, it was pretty rare even for pork but no worse than I've had in restaurants where the waiters say 'tonight the chef recommends medium rare for your dinner.'

Will make again and do one of two things.

Either take temps up to 145 or maybe 150 for a bit more done to taste. Or will try 130 degrees then a 500 degree oven on a broiler pan to crisp it up (like I do with standing rib roasts). Not sure if that will massively overcook it though since it's twice the temps of the smoker for such a small thickness of meat. Unsure...

For $5 for each little tenderloin, totally worth experimenting with though.

I look for tenderloins in the local asian market, they're like $1 per tenderloin.

oops, the secret is out.

I do brine them for flavor, typically each one a different brine.

I normally go little higher on doneness, 145 to 150 or so.

I do try to trim all the silverskin off, that's just NOT good eats.

Sounds like it worked and I much prefer them to pork loins (yuck)

Are you getting them for $1 each or $1/lb? That is a great bargin for that price. Guess I'll have to see what the markets have here, but it will be way more than you are paying I'm sure.
