Garnish is OPTIONAL! You don't want to use it, don't! Think of the poor Table Captains that have to tote the trays to the judges... With no garnish, potentially every box could weight 2-3 pounds, times 6 that's a possible weight of 36 lbs, then add the tray. Six slices of brisket look mighty poor in an empty box! IMO, good judges aren't judging the greenery anyhow.
Smokin' is right. I did "leftovers" in Bentonville and is that ever gross, dumping all that lettuce! Smiler

I am not a cook so I don't have an opinion either way, I just put the link there for forum members to use or not use as they see fit.

And, Candy Sue, point well taken, I also worked turn-ins so I know how heavy those boxes are, and I wouldn't want to heave around any trays of 3 lb. boxes, thank you very much!

Since "team mom" does garnish and boxes,she lets us live off of wilted lettuce,with bacon/vinegar dressing, garnished with lots of bacon,green onions,sliced radishes and hot skillet cornbread on the side.

Big ol' glass o' sweet tea and ya got south in yo' mouth. Cool
