I konw that the kill date is printed on the box for briskets,but is there anyway I can make an educated guess by the "sale by date"? I was at Sam's last night to buy plastic wrap(3000 ft). I walked by brisket cooler,couldn't believe it 25-30 choice briskets. I carefully inspected everyone(with my wife shacking her head).With what I have learned so far I could only find one 12.9lb keeper.I assured her that it would be much better than the 1st,what could have I been thinking...
The brisket had sell by 1/24/10 so I brought it home and put in bottom meat crisper in frig.I was hoping to smoke it next weekend. I hope that I made right choice by not freezing.

No, you can't guess.

You don't know if THEY have been holding it back in their cooler for a day, a week or a month.

That's why I ask them to bring out the case so I can look at it.

You can also get to know the meat manager, and tell him what you're doing. Maybe he'll know, maybe he won't.
