Best of two worlds.
Hot smoke the fillets for one half hour in warm climate or you can cold smoke for one hour in a cool climate before breading and deep frying. Works well on Perch (small Walleye).

Actually its the other way around. Walleye are just big Perch since the Walleye are in the perch family vice the pike family.
