I will be venturing into my first competition--the Lakeland Pig Fest at the end of January. I was out at the Plant City comp, where I sampled some of the best BBQ I've ever had. In addition, the competitors were more than happy to talk 'Q and were very friendly. I'm truly looking forward to the comp and learning lots from the others. Anyone else competing?

Keep your eyes and ears open. Last year I was cooking at a charity cook. The guy across from me was doing a whole pig. I saw him start making a BBQ sauce with two large bottles of ketchup. I didn't pay much attention to the rest of his ingredients. He cooked it up quickly. The pig was for the volunteers. When I had some of his red sauce with the pig meat, I went WOW! That was the best tasting sauce I ever had with pork. Now, I learned to watch things a little better. When I asked what was in it, he said I just threw a couple of thing together. I know it was done quickly. The sauce was to die for. You will always learn at the contests.
