Just got back from judging at Lakeland's Pigfest 2012 competition.
I had the good fortune of judging at the same table as Ray Lampe (a.k.a. Dr. BBQ). He is a nice fellow and a regular guy as well as a wealth of knowledge and experience.
The BBQ product the teams produced in Lakeland was absolutely top notch.
We lucked out in the chicken category with boxes that were all darn near straight "9"s across the board with only slight differences in appearance, taste, and texture. It wasn't hard to tell that these cooks were world-class.
What an aweome experience. Many thanks to the fine cooks that worked so hard to make a "perfect" turn-in box at Pigfest 2012. It was a privilege to sample the results of your creativity, dedication, and skill.
