Loading is the easy part, takes a little more info to do the actual cooks.
Other than don't put poultry above anything (the drippings are awful) there is too much variation in loading to really have a diagram.
My suggestions, learn one thing first, then the next. Doing multiple and different things just complicates the learning curve.
