We offer a 4 oz. portion of pulled pork or brisket with no bread. We also offer the same items in a 12 oz. size. The 12 oz is cheaper than buying 3 4 oz. portions.

We started doing this after quite a few people wanted only meat. I still stick a few pieces of fruit in there. And they still want sauce.

They're still getting plenty of carbs, but feel better about it, I think.

what peggy has left off is this.
she has built a nice business by providing one pound lots of pork or beef in a heavy freezer bag. sales on this has continued to increase. if we only had the time to market it i am sure we could do what zeb has done and that is shut down the general sales area and just supply caters,restaurants and do catering delievery only sales. at any rate i still feel this is the way we are headed and would tie in nicely with a take out only place.
just to give you an idea the pork sales work out to 16 bucks a pound and the brisket is 20 and so far everyone is happy
