We offer a 4 oz. portion of pulled pork or brisket with no bread. We also offer the same items in a 12 oz. size. The 12 oz is cheaper than buying 3 4 oz. portions.
We started doing this after quite a few people wanted only meat. I still stick a few pieces of fruit in there. And they still want sauce.
They're still getting plenty of carbs, but feel better about it, I think.
