I've been bragging so much about the fantastic job my Smokette does with ribs that my friends are taking a "put up or shut up" stance with me. I'd like to invite a bunch of them for a mini rib-fest but, of course, there is only so much room for slabs in the smoker.

Is there an accessory or some other way to fit 6 slabs of St. Louis ribs in it? I know you can't hang them like you can in the '50' (dang, I wish I had sprung for the bigger one), but I was thinking maybe halving them, then loading them on edge, sort of on a slant. But I know I'd need some kind of a custom rack for that.

Is this even feasable? If so, would the cooking time be lengthened? Anybody have any ideas? Thanks.

Mornin',meatfest.

I have wadded up balls of Al foil to support the ribs at a lesser angle than the rib racks.

Cutting the ribs to fit the racks helps and St. Louis cut or loinbacks lets you keep more of the desired serving product.

Not perfect, but it has helped me.

I have not found that my cooking time increased measurably, and this allows you to pull out the smaller cuts earlier.

Hope this helps some. Smiler
