I just did my first set as well and have to say just like Smokin said. They were the best ribs I have ever eaten. They had perfect smoke deep in the meat, were juicy, and tender but with enough texture to make them very tasty. I cooked mine at 250 degrees for almost 4 hours. I drizzled them with apple juice a few times and the last 20 mins I slathered them up with bbq sauce. I used cookshacks rub and left them in the frig overnight before I cooked them. Of course I pulled the membrane off them as well. (:>Wink
