First of all, I would like those people who responded to my first post. My ribs turned out damn near perfect. I only did one slab about 2.25 pounds. Put the rub on that CS gave me with the unit, wrapped it and put it in the fridge overnite. I put one chunk of hickory in the unit and set the smoker at 225. Smoked for a total of 5.5 hours. The last 1.5 hrs, I basted ribs with apple juice and wrapped in foil. The meat was tender, moist and fallin off the bone. Just the way I like it. The smoke wasnt over powering, just right. Thanks to everyone again. Putting on two 7.5 pound butts today, cant wait! The verbage is true......KISS!!
