I have a Smokette Elite (just got it after my original Smokette died over the winter) and have been asked by my Aunt to smoke about 8 butts for a party on saturday.

I am planning on smoking 4 wednesday through Thursday in one load then another load Friday-Saturday. That way I can foil, cool and refrigerate the first 4 and take over 4 straight from the smoker (after resting them). Does this sound doable.

I notice that the Elite has a wider oven, which would easily allow me to put two butts per rack. How much wood? I am assuming I would just increase by 1/3 my normal 1-2 butt amount.

Be sure to correctly cool the first load of butts to stay safe. In the food serving world, we have two cooling options for time. The first method is one step, which is going from 135 degrees F to 41 Degrees F within 4 total hours. The second method is two steps which is to go from 135 degrees F to 70 degrees F within 2 hours, then from 70 degrees F to 41 degrees F within 4 hours, a total 6 hour cooling time.

Pays to be safe.
IF you are cooking well ahead of time.... I would smoke the first 4, rest them, pull and sauce them then package in ziploc bags or vacuum seal and cool that way... It will cool faster and re-heat really well as pulled... I wouldn't try to reheat full butts.

I usually just reheat in a big nesco roaster... works pretty well..
