I have new 055 and the tempaerture moves between 190 degrees and 238 degrees when dial is set to 225. This happens with door shut and cycles all the time like this. Is this normal. At first I thought the thing was turning off

Yes, normal. Average looks to be real close to 225*F.
Yep, same with my 55. The fluctuation seems to lessen, the more you use it. Mine went from 188-272 at first, after a year it now swings from 195-230, but everything comes out great - providing I do my part. It's hard to get used to using just 2oz of wood after burning cords of it in my stickburner 
Same as my month old 55. Seems to fluctuate less after every cook. Everything I have cooked turns out great. Now I can work on rubs, sauces, how much and what kind of wood that suits my taste best. Also need to get a foodsaver for the times I dont have a big crowd.
Yep. The more you use it, the more seasoned it becomes, the more you cook at a time, the more efficient it will be.
I have cooked lots of meat (2 Briskets, 12 chickens,& 6 spare ribs) with it for only having it one week. They all turned out suburb. Best food I cooked in a long time. I was just wondering if it was normal Thanks for the Help
The more food you have in it, the more stable the temp will be as well. Thermal mass and science you know.
