Hi,

I've been following the forums for a little over a week now soaking up the smoke I mean knowledge.

I just picked my new Amerique on Monday and ran it through a cycle with some wood and no load on Tuesday. Right now I am waiting on two Chickens to come out that I loaded at 6.

Just getting my feet wet here I've never been a bbq'er barely a griller but I found out about these smokers a couple of years ago and saved till I could get one. Love the fact they are MIO (Made In Oklahoma).

ive had my new amerique for 10 days. i followed the forums for 3 months while i saved up. because of the issues, problems, and successes that i read about i was prepared when the smoker arrived. the seasoning went off without a hitch. ive smoked chicken and ribs and they were fantastic. im stepping out and will try brisket next. the smoker is great. thanks to the forum. i give all you guys credit for my early success
I smoked the chickens just to get something in it, couldn't wait on a butt I'm pretty impatient...

I started a butt Monday night and then it stormed and I lost power for about 3 hours but not before it hit 175 so I fired it back up when the power came back on and it was great.

Right now I am running three butts that are on the downhill side for the guys at work tomorrow and a pan of beans using Smokin's recipe.

I made some of Smokin's Vinegar mop and Virgin Mustard to try out on them as well.

I also ran a brisket flat last weekend that I wasn't extremely happy with, came from homeland and it was probably trimmed to much but it was edible.
