I have a SM066 AmeriQue that I have used twice with + rib results. Plan to do smoke a 10lb choice brisket and 4lb whole chicken Memorial Day. Any concerns with smoking the chicken towards the end when brisket almost ready using hickory (Only wood currently have)?

Best to place brisket on middle rack and chicken above brisket?

Any concerns wrapping brisket with non coated butcher paper?

Appreciate any feedback for a ex stick burner turning electric.
