My Model 55 arrived last week right on time. Smoked a 9 lb IBP pork butt that was absolutely amazing. Took a little longer than expected ("It's done when it is done", right?)but it was worth the wait. Started smoking at midnight at 225 degrees for a scheduled finish time of 6 pm the next day (2 hrs a pound. At 6 pm the internal temperature was 188. Kicked the temperature dial to 250 degrees which provided the wanted 205 degree internal temperature near 8 pm. Great bark and very juicey on the inside.

I want to thank all of the CS Forum "experts". After having read all of the posts on the Forum regarding how to use the smoker, I was able to get perfection (at least for the taste buds of my family)the very first time.

Howdy,Boilermaker.

It sounds like you got it workin' for you.

The nice thing about the butts is that they are very forgiving.

When you get to that 188�,if you are pressed for time,you might want to reach in and try to wiggle the bone.

If you are close,foiling it in the cooler will probably give you at least another 6� and you can pull it when you are ready.

Just one more approach to adjust to the situation. Big Grin
