Well not all recipe's do well in the smoker, BUMMER! I smoked some REALLY nice diver scallops and jumbo shrimp tonight using a tried and true grilling/saute recipe that I have used many times. I was able to get them cooked to perfection, but they were a LITTLE (read too much) over the top on smoke (2 oz apple). They cooked in less than 30 minutes at 200 degrees. I thought the scallops were good but a little over smoked and the shrimp were WAY over smoked. I think the subtle flavors were overpowered by the smoke. Oh well, live and learn......

Hmmm, I have a nice Scamp filet for tommorrow night, mebbe a little pecan and apple............ lol
