Only 40 aging days left before Christmas

I know, I know YOU are thinking about Thanksgiving.

I'm thinking about Christmas. Got an IM from Ranger, so I wanted to post the info and share.

It's now only about 40 days away. MY PR is in the fridge again away. Minimum most people say is 21 days.

So GET SHOPPING NOW!

You KNOW that the USDA classifies Choice Rib Roast as "Prime Rib" but let's not hijack the thread and go there (someone with that question, please start a new one).

Prime $$$$ were through the roof so I went with Choice.
