Had a nephew from PA come down this past weekend. He's been into smoking for just a year or so now using a Brinkmann Bullet smoker. We kid each other all the time about who's the "Smokemaster". lol. Well, this past weekend, I schooled him on the Cookshack and BBQ. Put 2 slabs of spares in at 3:30 p.m. Friday, shut the door, and opened it up at 10:30 poolside to enjoy some GREAT ribs from my 009. After we finished those off, I put a 6.5 butt on and closed the door. Took it to 195 degrees on Saturday afternoon at 4 pm. Wrapped and coolered this sweet piece (after my son and I nibble on some bark as we took it out). Ate it at 5:30 - just tremendous.
Thursday evening I did some stuffed Jalapeno's wrapped in bacon, oh la lah.....hot and excellent.
So, to make the story short, the Cookshack proved who the real "Smokemaster" was....yours truly.
